Lorna, the cook at Fairwinds at Tryall Club for the past 22 years made this recipe for us on
a recent visit.

LORNA'S JAMAICAN RED SNAPPER IN SAUCE
Season fish with salt, pepper, scallions, thyme, onion, sweet pepper.
Put on skillet to heat with oil. Saute fish on both sides until slightly brown then remove fish
from skillet. Add all of your herbs in skillet. Add butter along with a little water, some soy
sauce and ketchup. Simmer for about 10 minutes. Return fish to skillet and let it cook until
ready.
