SAMPLE BREAKFAST AT KNOCKANDO AT ROUND HILL
Fresh fruit from Knockando's own trees (papaya, mango, lime, breadfruit) is served
every day for breakfast along with the cook's special breakfast items.

Day 1-Fresh fruit, scrambled eggs, bacon, toast with guava jelly, coffee,
fresh squeeze orange juice.

Day 2-Fresh fruit, bacon, blueberry muffins, toast and jelly.

Day 3-Fresh fruit, bacon, Banana Pancakes, toast and guava jelly.

Day 4-Fresh fruit, a Jamaican breakfast dish of ackee and
cod fish, pancakes, bacon, toast and jelly.

Day 5-Banana pancakes, bacon, fresh fruit and eggs.

Day 6-French toast, Banana Nut Muffins, Eggs cooked to order.

LUNCH: SERVED WHENEVER YOU WISH
The cook will prepare either a light or hearty lunch depending
on your preferences. In our case, after eating a large breakfast
we were happy with salad and sandwiches.

SAMPLE LITE LUNCH MENU AT KNOCKANDO
Fresh fruit

Boiled eggs

Mixed Green Salad with fresh vegetables and meat,
such as smoked chicken, tuna salad
or homemade chicken salad.

A variety of sandwiches; grilled cheese, smoked turkey,
tuna salad or chicken salad

SAMPLE HEARTY LUNCH
Hamburgers, hot dogs, or Jamaican beef/vegetable patties and French fries.

DINNER: SERVED WHENEVER YOU WISH
Whatever you do, don’t miss dinner. This is when the cook really shows off their culinary
expertise. If you have food allergies or preferences, let them know before they do the
grocery shopping. Otherwise, it’s best to let them plan the menus so they can cook their
specialty dishes.

Our favorite dishes were the Lyonnaise Potatoes, Stuffed Cho Cho, Jerk Chicken and
Fried Plantains. All of the desserts were wonderful, especially the Key Lime Pie made
from Knockando's lime tree and Rum Baked Bananas.

SAMPLE DINNER MENU AT KNOCKANDO

Day 1: Barbecued pork, rice and black beans, mixed green salad, mashed potatoes
fresh green beans with garlic, sauteed carrots, Pumpkin Soup, Rich Chocolate Mousse.

Day 2: Beef hot pot over noodles, corn on the cob, mixed salad.
(Hot pot is made from local beef slow-cooked until deliciously
tender.)

Day 3: Caribbean style red snapper, mashed potatoes,
fresh green beans and stuffed chou chou (a delicious Jamaican vegetable
similar to squash), Key Lime Pie.

Day 4: Grilled Jerk Chicken, white rice with scallions and special seasonings, steamed
mixed vegetable dish of broccoli, chou chou, beans and carrots, Lemon Meringue Pie.

Day 5: Jamaica style shrimp, lobster and red snapper (don’t miss this dish!), rice and
black beans, Jamaican Rum Baked Bananas.

Day 6: Red Snapper with cream sauce, mushrooms and peppers, boiled corn, fried
plantains, steamed broccoli and cauliflower.
